How to encourage a parent to save for retirement?

I’m personally struggling with a never ending fear and burden that my mom won’t be able to take care of herself when she’s older because she has no retirement savings. She’s currently 60 and I’m trying to coach her to save money (not going out to eat, saving what you can etc) but she refuses to listen.

What do you do in this scenario? I personally don’t make the most money so I wouldn’t be able to support the both of us if something were to happen. I also have my own bills to pay — yes, she’s my mother but also an adult in my opinion.
